How to Freeze Mangoes at Home: Step-by-Step

Freezing mangoes during peak season is the best way to enjoy mango flavor year-round. We have noticed in our fields, we process Grade B mangoes (cosmetically imperfect but excellent-tasting) into frozen cubes and puree for our own family's use throughout the year. What You Need

  • Ripe mangoes (slightly overripe is fine — more sugar = better freezing)
  • Sharp knife and cutting board
  • Baking sheet or tray that fits in your freezer
  • Parchment paper or silicone mat
  • Freezer-safe zip-lock bags or airtight containers

Method 1: Flash-Freeze Cubes (Best All-Purpose Method)

This is the gold standard. Individual quick-freezing (IQF) prevents pieces from clumping into a solid mass.

Step-by-Step

Step 1: Select and wash. Choose fully ripe mangoes. Wash under running water and pat dry. Slightly overripe mangoes (softer, sweeter) actually freeze better than firm-ripe ones because the higher sugar content acts as a natural cryoprotectant.

Step 2: Peel and cut. Stand the mango upright and cut "cheeks" (large flat pieces) from each side of the flat seed. Score into 2-3cm cubes. Scoop cubes out with a spoon, or peel and slice off the seed. Cut all remaining flesh from the seed edges.

Step 3: Arrange on tray. Line a baking sheet with parchment paper. Spread mango cubes in a single layer with space between each piece. No overlapping — pieces that touch will freeze together.

Method 2: Freeze Mango Puree

Puree freezes even better than cubes because there are no intact cell walls to rupture.

Step-by-Step

  1. Peel and remove seeds from ripe mangoes
  2. Blend in a food processor or blender until completely smooth

  4. Pour into ice cube trays, silicone molds, or small freezer containers
